Key to securing this Award was Ken’s commitment since he took over the Fish & Chip Restaurant in Hoveton 17 years ago to build-up a menu of 30 different species of sustainably sourced fish ranging from Pollock Panasuis to Squid and Sprats. In a recent interview Ken agreed to let us in on the secret to the Restaurant’s year-on-year success:

We pride ourselves in providing a truly customer-focused service which is undoubtedly the reason why so many of our customers have remained loyal over the years.” Ken’s commitment to expand the services he offers is evident in that he has recently installed a brand new fryer which can fry 20 pieces of fish at one time.

As well as taking advantage of a wide array of fish, customers can enjoy freshly cooked chips made from the best high quality potatoes including Maris Piper and Maris Bard:  “All our chips are cooked in traditional beef dripping making them crisp and giving them a delicious flavour.  Our batter is made very thin, so you get big fish with very little batter, rather than the other way around.”

As well as the fish on the company’s normal menu i.e. Cod, Plaice, Haddock, Skate, Rock Eeel, Scampi & Cod Roe, ken also offers a total fish menu of 43 with more species on order. The following is a sample of the wide choice of fish available and prices charged at Kens:

The Restaurant is open from 11.30 - 2.00pm all year round but during the 6 weeks school holidays it is open 11.30 - 6.oo pm.

Boasting a rich history dating back over 600 years, The Old Swan at Cheddington is a real 'hidden gem' for anyone looking for exciting and imaginative cuisine, served in a friendly, relaxed environment.

The Old Swan is the quintessential 'ancient Inn with a modern twist', as proprietor Helen Cash  outlined in a recent interview:  "Since taking over the Swan two years ago we have sympathetically refurbished it throughout, including having the roof completely rethatched, as well as creating a friendly comfortable environment inside that seamlessly blends its rich heritage with the latest in modern facilities to meet the needs of our 21st Century patrons."

"Where we differ from other similar establishments is that we strive to offer a relaxed ambiance where the whole family can get together and enjoy a meal and as all meals are cooked fresh we can offer bespoke versions of dishes to meet dietary needs."  This philosophy is further highlighted by the fact that the Swan provides a dedicated Children's Play Area.

Key to securing this Award was the wide variety of dishes on the menus at The Old Swan: Helen added: "An authentically mediaeval setting requires an equally genuine approach to our food.   All our Menus and special dishes are created and designed by the Chef Team led by the Head Chef Tom Clark and our consultant Chef, Stuart Marlow, VIP Chef at the RAF."

Helen commented: "Whether you choose a traditional English dish or opt to be more adventurous and sample one of our exciting dishes that originate from faraway places overseas, you can be sure that it will be freshly cooked to order, using locally sourced produce when possible." Visitors are also able to enjoy the Inn's homemade deserts, chutney, Chai Smoked Duck, together with cakes and scones.

The Inn also provides a relaxed atmosphere for disabled visitors, having ensured facilities are in place to enable access for patrons using a wheelchair.

Wine growing is a new venture for Mrs Elizabeth Scott whose family run an arable farm at Skelbrooke just north of Doncaster, as she explained in a recent interview:

Summerhouse VineyardHaving taken over the running of the farm when my husband had a stroke in 1995, I took advantage of an advertisement in the Yorkshire Post in 2004 offering ten vines to any farmer who would have a go at growing them so far north.   On the basis that no true Yorkshire man or woman ever looks a gift horse in the mouth – I decided to give it a go.  When planting the first vines in 2005 we selected a one hectare parcel of land on the Summerhouse Farm that benefited from limestone soil which gently sloped in a southerly direction. Much to everyone’s surprise the vines did extremely well and the rest, as they say, is history!”

“Most English wine, including Summerhouse, is produced from hybrid vines which thrive in our climate and having initially planted 500 Rondo and 500 Seyval Blanc in 2005, we have continued to add other varieties of vine over the years, including Madelaine Angervin, Pinot Noir and Phoenix.  We were unsure if the Pinot Noir would grow well in our climate but it has surprised us all by flourishing, making me wish I had planted more.  All in all, over the past six years all our vines have flourished and provided excellent yields.”

It may surprise you to learn that whilst English vineyards already have a track record of stunning wines, evidenced in blind tasting competitions has shown that some English sparkling wines have also given the very best of champagnes a ‘run for their money’.

Summerhouse Vineyard is no stranger when it comes to receiving accolades, with its’ Rondo 2009 wine receiving a Bronze medal and its Seyval Blanc ranked as ‘Highly Commended’. Elizabeth added: “We are delighted with the success of our latest sparkling wine aptly named Summerhouse, which has thrived due to a combination of the cussed nature of the vine, which produces its very best quality when things are not easy for it, and the edginess of our climate.

We were fortunate that the severe frost this year only brushed over us, so that whilst the Pinot Noir leaves were slightly affected, all the other vines look healthy and are bursting with grapes.”

Now in her eighties, Elizabeth has recently joined a share farming consortium, enabling her to concentrate more on the administrative side of the business whilst leaving the day-to-day running of this highly successful vineyard in the capable hands of Vineyard Manager David Hunter.

Summerhouse Vineyard Commenting on receiving this Award, Elizabeth went on to say: “Thank you, it is a great honour to receive this award. Developing the vineyard has been a wonderful experience. Many years ago my husband and I went to France on a touring holiday
and when I saw the rolling limestone hills of the countryside around Rheims-I thought of Summerhouse. However the weather was much too cold. Never in my wildest dreams did I imagine that it would change, that it would be possible, one day. To have a vineyard on our own sunny limestone slope. We are now producing a variety of wines from 3 classic reds through to 2 rose, 3 whites and a sparkling white wine.”

Since taking over THE ARCHERS Landlord Daniel Hughes has transformed this once neglected Pub by giving it a total refurbishment costing £1000’s, which included completely renovating and improving the Pub’s Cellar, Bar and Restaurant, creating a comfortable, welcoming environment, as  Daniel explained in a recent interview: “We felt it was important to create the right atmosphere in which our customers could relax and socialise with family and friends.”

In selecting THE ARCHERS for this Award, the Judges were particularly impressed with the exciting and imaginative cuisine served in its Restaurant: “We offer a wide choice of British style meals, all of which are freshly cooked daily to order, using locally produced ingredients where possible.” Fast achieving a reputation for its delicious Sunday Roasts, the Pub also offers a ‘Take Away’ service.

In this day and age it’s refreshing to find a highly successful business that has been in the same family since 1909.  Yet that’s exactly the case with KNIGHTS FISH & CHIP RESTAURANT which has been in the Knight family for generations.William R J Knight, whose father established the business, recollects his memories of the Fish & Chip Shop as a child:  "My earliest recollection of our shop was during the war seeing a queue of men in uniform. I often used to fall asleep in an open cupboard on piles of newspapers, which were at that time used as wrapping paper. Fish deliveries during the war were very unpredictable and spasmodic. The cod that did arrive had only been gutted and not filleted – my parents had to do that – and what remained was boiled, the flesh removed for fishcakes and the bones buried in our garden.”
William’s daughter and her husband Kevin Mitchell have now taken over the reigns of the business and they are proud of the excellent reputation the Restaurant has achieved over the years, as he explained in a recent interview: “We are probably the oldest established fish and chip restaurant in the UK that has remained in the family throughout its existence, as well as being the oldest established business in Glastonbury. Our success over the years has no doubt been due to our continual commitment to source the finest quality cod, haddock and plaice available, delivered daily from British ports, not to mention tons of Cambridgeshire potatoes prepared on site throughout the year.”

Apart from its’ successful takeaway business, the company also boasts a comfortable Restaurant with a maximum seating capacity of 82, including 12 in its Courtyard area: “We offer a wide choice of home-cooked British dishes and diners are able to accompany their meal with a glass of wine from our range of classic favourites, draught or bottled beers, or if you prefer you can sample some local Somerset cider.”

This philosophy is highlighted by the fact that the Restaurant provides Gluten-free Fish & Chips every Thursday, as well as offering a choice spicy bean burgers and vegetable pasties for Vegetarians.

With roots dating back to the 17th century, the Black Horse Pub/Restaurant has somehow managed to seamlessly blend its rich heritage with the latest in modern facilities to meet the needs of its 21st Century patrons.  Under the management of Kevin Davis, the Pub/Restaurant is able to accommodate up to 70 diners at any one time in its two charming ‘snug areas’ and large conservatory, where guests can enjoy an open fire. Kevin commented: “Our bright and airy conservatory is the ideal place to relax and watch local nature from within comfortable surroundings. For the warmer months we have a large patio area with modern furniture, the ideal spot to dine ‘al fresco’ whist enjoying a chilled glass of crisp wine.”

Kevin added: “We are proud of the high quality homemade food we provide, all of which is freshly prepared and served from our seasonally changing menu and Special boards. Wherever possible we source our ingredients from local suppliers within the Yorkshire area.

The Pub provides an excellent choice of fine wines and drinks on draught including Amstel, Fosters, Kronenbourg, John Smith Smooth, Guinness, Strongbow Cider, as well as real ales such as Black Sheep Best, Timothy Taylor's Landlord. Other beverages served include Hot Chocolate, together with a range of Fairtrade Speciality Coffees.
At this time of the year, visitors to the Pub are able to take advantage of its Patio & Beer Garden with lighting, comfortable seating with optional umbrellas. Lucky visitors are also entertained by aerobatic displays by visiting Red Kites from nearby Harewood House. Commenting on receiving this Award, Varinder went on to say: “It feel’s great to have an idea and finally incorporate it. Well I’m full of ideas however combining a passion with work is fantastic. It’s even more touching when your work is accepted. It’s been hard to get my product to where we are now having a 9 month and 3 year old children.

I have huge support from my husband Baljit who owns his own bakery and shares a great desire for fresh foods himself and might I add is a great cook. We make a great team I would never have been able to do this without his help. As my husband and I returned from our honeymoon in Nov 2006 I told him I felt there was a huge gap in the market for fresh authentic Indian flavours. Following this I landed a job within a reputable private equity bank in fund reporting and I often took samples of dishes I had cooked into work for my bosses and work colleagues to taste and they all commented that I should open up my own restaurant. The same was said by my friends and family whilst entertaining. Restaurant food is great but nothing beats good homemade food.

My business acumen is acquired from my father who from a young age was involved in running several businesses from gas stations and taxi firms to a convenience store. I would contribute by making homemade sandwiches with various fillings, which were sold on for a profit. My passion for cooking is all down to my beautiful mum who tried to deter me from hanging out in the kitchen and pushed me to become an independent woman. From an early age I was always intrigued by the different flavours in our food and used to love experimenting with my nana, but as I grew older my mum let me into some of her secrets, it’s not your normal Vindaloo, Madras, Korma  restaurant style food. My dishes are based on what we eat in our household good old Punjabi food. It’s simple but the flavours are rich. There are no artificial colourings, preservatives or additives in my sauces. I do hope you enjoy as much as we do! “

It gives us great pleasure to announce Mrs Muriel Brown, proprietor of Bardsley’s of Baker Street, has been selected by the Judges at Media Today Online to receive the prestigious Lifetime Achievement Award for services to the Food & Drinks Sector.

In a recent interview Muriel explained that her family had been involved in the Fish & Chip business for many years: “Having moved down south during the depression, my grandparents bought their first Fish & Chip Shop in Southwick and following the success of this venture they were able to move their business to larger premises in Brighton itself.”

Muriel’s grandfather Ben Brown opened the original Bardsley's in Upper Russell Street, where the new Brighton Shopping Centre now stands. For many years this shop supported all subsequent generations of Bardsley’s who in time opened their own restaurants. “My grandmother had five children all of whom showed exceptional business acumen; my Uncle Jim, opened up a Fish & Chip Shop in Gloucester Road, my Aunties Isobel and Harriet in Upper Gloucester Road, Mary in Edward Street and Emily in Upper North Street. The youngest of the five children being my mother and upon marrying Roy, my dad, he too was also to play a key role in making the business a success.”

Therefore, it comes as no surprise to learn that Muriel was to follow in her grandparents and parents’ footsteps taking an active interest in the family business: “I can remember when I was a small child my grandparents looked after me in the school holidays and as a treat I was allowed to go into the Shop for half an hour each day.”

Today only Bardsley's of Baker Street is still owned by his direct descendants keeping the family traditions alive.Muriel’s grandparents and parents would be proud of the reputation Bardsley’s of Baker Streethas achieved over the years as one of the region’s leading Fish & Chip Restaurants that provides a truly customer-focused service.

Muriel added: “I am now semi-retired, working anything from 2 to 4 days a week, and have handed the reigns over to my son Neil, who has inherited the same enthusiasm, dedication and commitment to excellence that has enabled the company to enjoy year-on-year success.”

Located well away from the seafront, near Preston Circus, Bardsley's has been run by the Brown family for four generations over the past 85 years, during which time the company has built up an impressive reputation for providing freshly caught fish and chips to residents of Brighton and visitors alike.  The business is currently run by Roy Brown, his wife Muriel and their son Neil. “We were founded by our great grandfather Ben, who was a blacksmith in Lancashire. Throughout the year, the Directors at the Media Today Online select companies that have made an outstanding contribution to their particular field.  Therefore, in line with this philosophy it gives us pleasure to announce ­­­­­­­­­­­­­­­­­­­­­­ HAPPY INN BUFFET has been selected to receive the BA AWARD ORIENTAL FOOD SPECIALIST OF THE YEAR 2011, an independent Award Programme recognised both locally and nationally.

The Award Scheme was created in order to recognise those businesses and individuals who have made an outstanding contribution to their particular field.  We are always keen to bring attention to those who are providing a product or service that stands out from the crowd and deserves to be appreciated not only by our readers, but also by a wider audience.

Commenting on receiving this accolade Stephen of Happy Inn Buffet said,
“I’m very excited about receiving this award because I have a very good team working for me and I couldn’t have done this without them. I’ve been in the trade for over 20 years but this is my first restaurant business venture. I couldn’t be happier because even with my experience I knew that the journey ahead would be a difficult on with the current economical situation and wit would be difficult to change the attitude that people have with many of the substandard buffet restaurants around.”

The appropriately named Happy Inn sits within the Chinese complex - the Wing Yip Centre in Croydon. The oriental-style buffet covers a range of regional cuisines to satisfy all tastes, meat lovers, seafood fans, vegetarians and vegans will all be sure to leave the restaurant a happy, satisfied and certainly full customer.

The lunch and full dinner buffet regularly features more than 30 to 40 dishes at a time although the menus change on a weekly basis in order to accommodate the freshest seasonal ingredients which allows the menu to remain exciting for the chefs and returning customers alike.

Customers can also choose from over 80 dishes on the main à la carte menu which is available at the same time as the buffet. Both long time fans of oriental cuisine and those that are not so familiar will find more than enough dishes to enjoy such as the traditional favourites such as crispy duck or delicacies such as mussels in black bean sauce for the more adventurous.

Visitors to The Happy Inn can expect an efficient, friendly and sophisticated service as they enter the modern and clean décor, families will also be pleased to hear that whilst prices are reasonable, children are even less costly than adults.

Taken over in April of last year The Happy Inn can accommodate up to 150 people at a time ensuring a tasty turnover of food within the buffet stands during busy times and a warm and welcoming atmosphere.

Many people will associate a buffet restaurant with ideas of poor service, and stale food of a not so high quality but Stephen assures us that this is not the case with The Happy Inn saying, “I’ve always believed with enough hard work and the right attitude I think we can succeed in providing customers with a high level of service and superior quality of food that is associated with traditional ala carte restaurants but is unheard of from a buffet restaurant.”

And another highly satisfied customer seems sure to become a returning customer after their last visit commenting, “Visited here just before Christmas with a group of about 40. They catered for us all admirably. Excellent selection of food and great value for money. Unusually good oriental atmosphere for a buffet, looking forward to our next visit in the too distant future!
